Buckwheat is a genus of plants in the knotweed family.

Despite the name bookweizen it is not a grain, but a pseudo-grain and therefore does not contain gluten. Buckwheat is therefore well tolerated by people who suffer from celiac disease.

Ingredients

For the biscuit dough:

100g as finely chopped hazelnuts or walnuts (preferably with the moulinette)

4 beaten egg yolk

100g Rapadura (raw cane sugar), if you like it less sweet, take less

the pulp of a vanilla pod

zest of half a lemon

4 protein

120g buckwheat flour

For the filling:

100g hazelnuts or walnuts, chopped as finely as possible

1 glass of jam (e.g. cranberry or blackberry) or apple syrup, possibly with two to three tablespoons of juice or rum, stir until smooth, depending on firmness

500g cream quark (or whisk the corresponding amount of low-fat quark with whipped cream)

100g Rapadura or less, if you like you can also use honey instead, or half and half

Preparation:

Thoroughly stir the egg yolks with the rapadura, vanilla and lemon zest until frothy. Just be patient, it will take a while. The mass becomes very light over time and a firmer cream is created.

Carefully fold the egg white, the nuts and the buckwheat flour into the egg yolk mixture.

Line the bottom of a springform pan (24cm diameter) with baking paper and pour the dough into the mold.

Baking: 20-30 min at 180 degrees, make a knife test

Let the cake cool down a little, then take it out of the mold, place it on a wire rack and let it cool completely.

Cut the cake twice, if this seems too difficult for you, just cut it once and then proceed accordingly. Spread the stirred jam mixture on the bottom sheet of dough. Beat the quark with rapadura or honey or half and half well with the mixer, then pour a good quarter of the quark mixture onto the jam-coated dough sheet and spread on top. Then the second sheet of dough is placed on top and also coated with curd cheese. Then the third sheet of dough comes and the whole cake is coated all around with the rest of the quark mixture, smoothly smooth with a knife. Decorate with hazelnuts or walnut halves if necessary.

Variation options:

You can also use chopped almonds and / or dates instead of the nuts. There are no limits to your imagination.
