Have a loaf of bread sliced ​​straight from the baker. It is important here that all slices are of the same thickness, and the loaf of bread cannot be subsequently cut with a bread knife, for example. The thicker the slices are cut by the baker, the less likely they are to fall apart and bend when they dry. It is advisable to take an approx. 5cm wide test strip from the vacuum roller and pull it over the bread that has not yet been sliced ​​at the bakery. This ensures that the dried loaf later fits into the vacuum hose. If possible, buy strong vacuum packing material.
So only buy the bread when the weather service has announced full sunshine for the next day.
The surface must be completely and thoroughly disinfected at the beginning with a disinfectant or a 54% rum.
The types of bread from Lidl tested here: oat bread (left), wholemeal rye bread (middle) and a 750g world champion bread (right) were laid out on a wooden board in the sun from 7 a.m. in the order in which the loaf of bread was cut at the bakery, so do not mix up the slices with each other.

All discs were then turned about every 30 minutes. Thoroughly disinfect your hands and fingertips beforehand, or wear medical gloves.
Depending on the type of bread, the slice of bread may bulge because it is drier on top than on the bottom. This is to be prevented at regular intervals by placing a thicker pane of glass on the deformed bread slices for about 5 minutes. As can be seen in the picture above, the bread then sweats under the glass pane, but you can get the curvature out again. The more the bread has dried, the smaller the bulges will be.
After 10 hours of sunshine, all types of bread were completely dry and hard as rock, so that they could be vacuumed. To do this, put all the slices back together so that they form a loaf of bread in the uncut state. Gfls. make multiple subpackages. Due to the vacuuming, there is no more air in the sealed bread package and due to the drying there is also no moisture. As a result, the vacuumed bread can be stored for years and without a freezer, which no longer works in the event of a power blackout.
At Telegram I was asked what the drying process is good for, you can vacuum immediately. That doesn't work, because if, for example, you create a vacuum in a glass sphere by sucking out the air inside the sphere, an atmospheric pressure of approx. 1 kg per square centimeter of sphere surface will press from the outside, i.e. a Christmas bauble, for example, would not be able to withstand it and implode inward. If you now suck the air out of the vacuum bag, you also press 1 kg/cm2 from the outside. The crust might be able to withstand it, but the soft inside of the bread would be compressed to about 1mm and then come out of the vacuum packaging the same way.
On the picture on the first page you can see that I stack my slices of bread on a table top. Those who are in a hurry could also place the bread slices on a black metal surface, such as a baking sheet, or even on a copper plate. Both metals heat up to the point of being untouchable, which significantly reduces drying time.

If you have yet to buy a vacuum sealer, you could get one that also has a hose that allows you to use vacuum cans.

Oat bread and rye wholemeal bread from Lidl could be vacuumed without any problems. The 750g world champion bread from Lidl broke on its own while drying and was also very sensitive when it was bagged. As a result, there are some fragments, but of course you can also eat them.
How to preserve bread without a refrigerator – Update from August 9th, 2022:
The bread variety "Holsteiner Rolle" was tried next. The bread has a diameter of approx. 7 cm, so you can cut the slices a little thicker. The thicker you let the slices cut, the less it will fall into pieces when drying.
Sometimes it happens that sharp-edged seeds damage the vacuum sealing film and air again
can penetrate. Then perforate the vacuumed package, fix it with scotch tape and then vacuum this package in a 2nd. additional vacuum foil.
Moisten the vacuumed bread again and Toast:
Unpack the rock-hard bread for happi later, place it in a simmering basket with 3mm water and moisten it again. These are available at every flea market and if not, then simply buy two pots that fit on top of each other and drill holes in the top bottom of the pot. Everyone should have gotten a camping gas cooker with a 11kg gas supply for emergencies

I then toast the now moist bread over the gas flame and it is as crispy as it was when I bought it from the baker. For this I removed two small grates from a toaster from bulky waste and attached them to grill tongs:
Of course, you can also use this method to halve your annual bread costs by buying the previous day's bread from the baker, which has already become too hard, so that it can only be distributed to prisoners of war, which is what we ultimately are.
Instead of using a cooking insert, you can also moisten the dried bread if you position it over the pot with the converted grill tongs when cooking eggs. Here I am doing this with a pretzel that had been lying around for a week and had become rock hard.
The already pre-cut and packaged oat bread and rye wholemeal bread from Lidl does not break apart when drying.
I will now try other types of bread and finish this tutorial and post the final version later. Here first in advance, if you want to start with the sunny weather.

Update from 13.-14. August 2022 – Vacuuming fruit:


In addition to the next Hollsteiner roll and two rye breads from Lidl,

• And on the recommendation of a dear friend, I also try apple, pear and
Dry and vacuum seal banana slices. Sometimes I sprinkled the fruit with cinnamon or vanilla sugar:
Following the sun, the tabletop was repositioned in the afternoon and since insects were interested in the fruit, everything was covered with an insect protection net that you can buy in the hardware store for balcony doors.
If the fruit is not completely dry in the evening and the next day too cloudy
you can put the pieces of fruit in a pan and heat it up with the gas flame for about 5 minutes. Then turn off the gas again and only light it up again when the pan has cooled down. Light aluminum pans are less suitable for this because they cannot store much heat.
In the pan is 1 apple, 1 banana and 1 pear, all of which have been refined with cinnamon. If everything is a bit tough, it is also ideal as an accompaniment to a Christmas meal or as a dessert after a barbecue.

I painted the underside of a metal shelf from a cellar shelf with matt black paint and dried the fruit in the sun on it.
Here I shaded the thermometer and took a photo about 1 hour later. The black metal surface gets hot up to 45 degrees, so the fruit only needs two days until it is ready to be vacuum sealed.
Of course, all of this can be done with one
Electric-powered ovens or drying ovens faster, but I don't feel like putting unnecessary money in the pockets of corrupt electricity manufacturers and their public utilities.

Next, I'll work my way into how our ancestors made meat and fish last longer, of course without a freezer, because they didn't know anything like that or the electricity that went with it back then.
